  • 300g basmati rice
  • 300g king prawns
  • 1 tin coconut milk
  • 200g frozen peas
  • 150g baby spinach
  • 1 onion
  • 2 cloves garlic
  • 20g fresh ginger
  • 1 lime
  • 1 bunch fresh coriander
  • 1 tsp mild curry powder
  • 1 tbsp olive oil

    Prep the base

    Finely chop the onion, grate the garlic and ginger, rinse the basmati rice until the water runs mostly clear, cut the lime into wedges, and roughly chop the coriander.

    Cook the aromatics

    Heat the oil in a wide lidded pan over a medium heat. Cook the onion for 5 minutes until softened, then stir in the garlic, ginger, and curry powder for 1 minute until fragrant. Season the onion and aromatics with a pinch of salt and black pepper while they cook.

    Simmer the rice

    Stir in the rice, coconut milk, 350ml water, and a pinch of salt. Bring to a simmer, cover, and cook on a low heat for 12 minutes without stirring.

    Add prawns and peas

    Scatter the prawns and frozen peas over the rice. Cover again and cook for 5-6 minutes until the prawns are pink and opaque and the rice is tender.

    Fold in spinach

    Turn off the heat. Fold through the spinach, lime juice, and most of the coriander, then cover for 2 minutes so the spinach wilts in the residual heat.
