  • 8 sausages
  • 500g gnocchi
  • 2 red peppers
  • 1 courgette
  • 1 red onion
  • 250g cherry tomatoes
  • 3 cloves garlic
  • 3 tbsp green pesto
  • 1 bunch flat leaf parsley
  • 2 tbsp olive oil

    Prep the tray

    Heat the oven to 220C/200C fan/gas 7. Cut the peppers into chunks, slice the courgette into half-moons, cut the red onion into wedges, and lightly crush the garlic cloves.

    Start roasting

    Tip the peppers, courgette, red onion, garlic, and gnocchi onto a large baking tray. Toss with the olive oil, a pinch of salt, and black pepper, then nestle the sausages on top.

    Roast for 15 minutes, then turn the sausages and stir the gnocchi and vegetables so the edges brown evenly.

    Scatter over the cherry tomatoes and roast for another 12-15 minutes until the sausages are golden and piping hot, the gnocchi edges are crisp, and the tomatoes have started to burst.

    Loosen the pesto

    Mix the pesto with 1 tablespoon hot water in a small bowl. Roughly chop the parsley.
