Method

Thinly slice the red peppers, trim and halve the green beans, slice the spring onions with the whites and greens kept separate, grate the garlic and ginger, and cut the lime into wedges.

Whisk the soy sauce, honey, lime juice, and 3 tbsp water in a small bowl. Keep it beside the hob so it is ready once the turkey is browned.

Heat the vegetable oil in a large non-stick frying pan or wok over a medium-high heat. Add the turkey mince and cook for 5 to 6 minutes, breaking it up, until no pink patches remain and the edges are lightly golden.

Stir in the pepper strips and spring onion whites for 3 minutes, then add the garlic, ginger, and green beans for 2 minutes until the vegetables are bright and still a little crisp.

Add the egg noodles and sauce. Toss for 3 to 4 minutes, separating the noodles with tongs, until the sauce coats everything and the noodles are piping hot.

Divide between bowls, scatter over the spring onion greens, and serve with lime wedges for squeezing over at the table.
