  • 260g gluten-free porridge oats
  • 2 carrots
  • 2 apples
  • 400ml oat milk
  • 80g raisins
  • 50g sunflower seeds
  • 2 tbsp maple syrup
  • 2 tsp ground cinnamon
  • 2 tsp baking powder
  • 1 tsp vanilla extract

    Heat the oven to 180C fan. Line a small roasting tin or 20cm square tin with baking paper, leaving a little overhang for lifting the oats out.

    Grate the fruit and veg

    Coarsely grate the carrots and apples. Squeeze the grated apple lightly over the sink if it is very wet, then tip both into a large mixing bowl.

    Mix the oats

    Add the oats, raisins, sunflower seeds, cinnamon, baking powder, oat milk, maple syrup, vanilla, and a small pinch of salt. Stir for 1 minute until no dry patches remain.

    Scrape the mixture into the lined tin and press it into an even layer with the back of a spoon so the corners are filled.

    Bake for 25-28 minutes until the top is lightly golden, the edges look set, and the centre no longer wobbles when the tin is nudged.
