  • 500g turkey mince
  • 1 courgette
  • 300g couscous
  • 3 carrots
  • 250g Greek yoghurt
  • 1 cucumber
  • 1 lemon
  • 15g mint
  • 2 tbsp harissa paste
  • 1 tsp ground cumin
  • 2 tbsp olive oil

    Prep the kofta mix

    Grate the courgette and squeeze out excess liquid in a clean tea towel. Grate the carrots, grate half the cucumber, dice the remaining cucumber, chop the mint, zest the lemon, and cut the zested lemon into wedges.

    Shape the koftas

    Mix the turkey with the squeezed courgette, harissa, cumin, lemon zest, half the mint, and a pinch of salt and pepper. Shape into 12 small oval koftas.

    Soak the couscous

    Tip the couscous and grated carrots into a large bowl with a pinch of salt. Pour over 380ml boiling water, cover, and leave for 8 minutes until fluffy.

    Cook the koftas

    Heat the olive oil in a large non-stick frying pan over a medium heat. Cook the koftas for 10-12 minutes, turning every few minutes, until browned all over and piping hot through with no pink in the centre.

    Make the cucumber yoghurt

    Stir the grated cucumber into the yoghurt with juice from half the lemon, most of the remaining mint, and a pinch of salt and pepper. Fluff the carrot couscous with a fork.
