  • 600g chicken breast
  • 300g couscous
  • 3 courgettes
  • 200g frozen peas
  • 200g Greek yoghurt
  • 2 lemon
  • 20g parsley
  • 2 cloves garlic
  • 2 tsp dried oregano
  • 2 tbsp olive oil

    Slice the chicken into thin escalopes, grate the courgettes and garlic, chop the parsley, zest the lemons, and cut the zested lemons into wedges.

    Soak the couscous

    Tip the couscous into a large bowl with half the lemon zest and a pinch of salt. Pour over 380ml boiling water, cover, and leave for 8 minutes.

    Rub the chicken with 1 tablespoon olive oil, oregano, garlic, the remaining lemon zest, juice from half a lemon, and a pinch of salt and pepper.

    Heat a large frying pan over a medium-high heat. Cook the chicken for 4-5 minutes on each side until golden and piping hot through with no pink in the centre, then rest on a board.

    Add the remaining olive oil and grated courgette to the pan. Cook for 4-5 minutes until softened and most of the liquid has evaporated, then stir in the peas for 2 minutes.
