Method

Heat the oven to 220C/200C fan. Halve the baby potatoes, trim the green beans, chop the parsley, zest one lemon, juice half a lemon, and cut the remaining lemon into wedges.

Toss the baby potatoes on a large baking tray with 2 tablespoons olive oil, the lemon zest, a pinch of salt, and black pepper. Roast for 18 minutes until the cut sides start to turn golden.

Whisk the remaining 1 tablespoon olive oil with the Dijon mustard, lemon juice, half the parsley, a pinch of salt, and black pepper.

Turn the potatoes, then add the green beans and salmon fillets to the tray. Spoon half the lemon dressing over the salmon and beans.

Roast for 10-12 minutes until the salmon flakes easily with a fork and the green beans are bright green with lightly blistered edges.

Scatter the peas over the hot tray, return to the oven for 2 minutes, then spoon over the remaining lemon dressing.

Finish with the remaining parsley, then serve with lemon wedges for squeezing over the salmon and potatoes.
