  • 500g chestnut mushrooms
  • 500g carrots
  • 150g baby spinach
  • 1 red onion
  • 4 cloves garlic
  • 1 lemon
  • 20g parsley
  • 1 tsp smoked paprika
  • 2 tsp dried thyme
  • 3 tbsp olive oil

    Prep the vegetables

    Heat the oven to 220C/200C fan/gas 7. Cut the carrots into batons, thickly slice the mushrooms, slice the red onion, grate the garlic, chop the parsley, zest the lemon, and cut the zested lemon into wedges.

    Roast the carrots

    Toss the carrots with 1 tablespoon olive oil, smoked paprika, a pinch of salt, and black pepper on a baking tray. Roast for 25-30 minutes until tender with browned edges.

    Brown the mushrooms

    Heat 1 tablespoon olive oil in a wide frying pan over a medium-high heat. Add the mushrooms and onion and cook for 8-10 minutes until the mushrooms are browned and the onion is soft.

    Make the butter bean mash

    Drain and rinse the butter beans. Warm them in a saucepan with 100ml water, half the garlic, lemon zest, the remaining olive oil, and a pinch of salt for 5 minutes, then mash until mostly smooth.

    Stir the remaining garlic and thyme into the mushrooms for 1 minute. Add the spinach and cook for 2 minutes until just wilted, then squeeze in a little lemon juice.
