  • 1 tin chickpeas
  • 2 tins chopped tomatoes
  • 2 red peppers
  • 1 onion
  • 2 cloves garlic
  • 4 pitta breads
  • 15g coriander
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tbsp olive oil

    Prep the vegetables

    Finely chop the onion, slice the peppers into thin strips, grate the garlic, drain the chickpeas, and roughly chop the coriander stalks and leaves separately.

    Soften the peppers

    Heat the olive oil in a wide lidded frying pan over a medium heat. Cook the onion and peppers for 8-10 minutes, stirring often, until softened and starting to colour at the edges.

    Build the sauce

    Stir in the garlic, coriander stalks, smoked paprika, and cumin for 1 minute. Add the chopped tomatoes and chickpeas, season lightly, and simmer uncovered for 8 minutes until thickened. Add a small pinch of sugar only if the tomatoes taste sharp.

    Make 8 small wells in the sauce. Crack an egg into each well, cover the pan, and cook for 6-8 minutes until the whites are set and the yolks are still a little soft.

    While the eggs cook, toast or grill the pittas for 2-3 minutes until warm and lightly puffed, then cut each one into wedges.
