  • 300g basmati rice
  • 220g green beans
  • 2 carrots
  • 1 bunch spring onions
  • 3 cloves garlic
  • 25g ginger
  • 1 lime
  • 4 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp vegetable oil
  • 1/2 tsp black pepper

    Rinse the basmati rice. Trim and halve the green beans, coarsely grate the carrots, finely slice the spring onions and keep the green tops separate, then grate the garlic and ginger.

    Cook the rice

    Put the rinsed rice in a saucepan with 450ml water and a pinch of salt. Bring to a simmer, cover, and cook over a low heat for 10 to 12 minutes until absorbed. Turn off the heat and leave covered for 5 minutes.

    Mix the sticky sauce

    Whisk the soy sauce, honey, rice vinegar, lime juice, black pepper, and 3 tablespoons water in a small bowl. Keep it beside the hob so it is ready when the pork is browned.

    Heat 1 tablespoon vegetable oil in a large non-stick frying pan over a medium-high heat. Add the pork mince and cook for 6 to 7 minutes, breaking it up, until browned with no pink patches and a few crisp edges.

    Add the garlic, ginger, spring onion whites, green beans, and carrots to the pork. Stir-fry for 4 to 5 minutes until the beans are bright green and just tender, then pour in the sticky sauce and bubble for 2 minutes until glossy.
