  • 1 tin sweetcorn
  • 250g green beans
  • 300g cherry tomatoes
  • 1 red onion
  • 1 lemon
  • 20g fresh dill
  • 2 tbsp olive oil

    Heat the oven to 220C/200C fan/gas 7. Halve the new potatoes, halve the cherry tomatoes, slice the red onion into wedges, trim the green beans, drain the sweetcorn, chop the dill, and zest and juice the lemon.

    Toss the potatoes and red onion with 1 tablespoon olive oil, half the lemon zest, black pepper, and a pinch of salt, then roast for 18 minutes until the potatoes start to turn golden.
