Method

Whisk the chia seeds, light coconut milk, maple syrup, lime zest, and 1 tablespoon lime juice in a large bowl for 1 minute until the seeds are evenly suspended.

Leave the bowl for 10 minutes, whisking again after 5 minutes so the chia seeds do not clump at the bottom.

Dice the mango flesh, slice the bananas, and squeeze a little lime juice over the fruit so it stays bright.

Spoon half the chia pudding into four pots, add most of the mango and banana, then top with the remaining chia pudding.

Scatter over the pumpkin seeds and reserved mango. Chill for at least 20 minutes if making ahead, or serve straight away once thick and spoonable.
