Method

Hull and halve the strawberries, peel the bananas, zest half the lemon, then cut the bananas into chunks.

Put three quarters of the strawberries, all the banana, coconut yoghurt, chia seeds, maple syrup, lemon zest, and 1 tablespoon lemon juice in a blender and blend for 1 to 2 minutes until thick and spoonable.

Pause and scrape down the blender. Blend for 20 seconds more, adding 1 tablespoon cold water only if the blades need help moving.

Spoon the smoothie into four bowls and top with the remaining strawberries and pumpkin seeds.

Finish with an extra pinch of lemon zest and serve immediately while the bowls are cold and thick.
