  • 2 tins cannellini beans
  • 500g passata
  • 150g baby spinach
  • 250g cherry tomatoes
  • 125g mozzarella
  • 1 onion
  • 2 cloves garlic
  • 15g fresh parsley
  • 1 tbsp olive oil
  • 2 tsp dried oregano
  • 1/2 tsp black pepper

    Finely chop the onion, grate the garlic, drain and rinse the cannellini beans, halve the cherry tomatoes, tear the mozzarella, and roughly chop the parsley.

    Heat 1 tablespoon olive oil in a wide frying pan over a medium heat. Cook the onion with a pinch of salt for 5 minutes until soft and glossy.

    Build the tomato sauce

    Stir in the garlic, dried oregano, and black pepper for 1 minute, then pour in the passata and 100ml water and simmer for 5 minutes until slightly thickened.
