  • 250g frozen peas
  • 4 flatbreads
  • 1 tin chopped tomatoes
  • 1 cucumber
  • 1 red onion
  • 3 cloves garlic
  • 30g fresh ginger
  • 200g Greek yoghurt
  • 15g fresh mint
  • 30g fresh coriander
  • 1 lime
  • 1 tbsp vegetable oil
  • 2 tsp mild curry powder
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1/2 tsp black pepper

    Dice the cucumber, finely slice half the red onion, chop the mint and coriander, zest and juice the lime, grate the garlic and ginger, and finely chop the remaining red onion.

    Stir the Greek yoghurt with the cucumber, mint, half the lime juice, a pinch of salt, and a little black pepper until cool and spoonable.

    Heat 1 tablespoon vegetable oil in a wide frying pan over a medium-high heat. Cook the lamb mince with a pinch of salt for 6 to 7 minutes, breaking it up until browned and no pink remains.
