Method

Dice the mango and banana for 3 minutes, finely zest the lime, and lightly crush half the raspberries with a fork so they become juicy.

Stir the coconut yoghurt with the chia seeds, maple syrup, and lime zest until the seeds are evenly mixed through.

Spoon the coconut yoghurt into four bowls or lidded pots, then layer in the mango, raspberries, and banana.

Scatter over the pumpkin seeds and squeeze over a little lime juice just before serving so the mango and raspberries taste bright.
Keep the pumpkin seeds separate until serving if packing the pots ahead.
