  • 300g basmati rice
  • 2 red pepper
  • 250g frozen peas
  • 1 bunch spring onions
  • 3 cloves garlic
  • 30g fresh ginger
  • 1 lime
  • 30g fresh coriander
  • 2 tbsp tomato puree
  • 1 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp black pepper

    Slice the red peppers, slice the spring onions with whites and greens kept separate, grate the garlic and ginger, chop the coriander, and zest and juice the lime.

    Rinse the basmati rice, then simmer with 600ml water and a pinch of salt for 10 minutes. Turn off the heat and leave covered for 8 minutes.

    Heat 1 tablespoon olive oil in a wide frying pan over a high heat. Add the pork mince with a pinch of salt and cook for 7 to 8 minutes, breaking it up until browned with crisp edges and no pink remains.
