Method
Rinse the quinoa thoroughly in a fine sieve. Quarter and core the pear, then cut them into 1cm pieces. Finely zest half the lemon and squeeze 1 tablespoon lemon juice.
Put the pumpkin seeds in a dry medium saucepan over a medium heat for 2 to 3 minutes, shaking often, until they smell nutty and begin to pop. Tip them onto a plate.
Return the saucepan to a medium heat. Add the pear, 0.5 teaspoon ground cinnamon, 1 tablespoon maple syrup, lemon juice, and 3 tablespoons water. Cover and cook for 6 to 8 minutes until the pear pieces are tender but still hold their shape.
Put the rinsed quinoa, 800ml oat milk, remaining 1 teaspoon ground cinnamon, and salt in a large saucepan. Bring just to a simmer, cover loosely, and cook for 18 to 20 minutes, stirring often, until the grains are tender. Stir in the remaining 200ml oat milk for 2 minutes until creamy.
Divide the quinoa porridge between four bowls. Spoon over the cinnamon pear and their juices, then finish with the toasted pumpkin seeds, remaining 1 tablespoon maple syrup, and lemon zest.
