  • 300g bulgur wheat
  • 1 large aubergine
  • 200g baby spinach
  • 1 onion
  • 2 cloves garlic
  • 2 tbsp tomato puree
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 700ml chicken stock
  • 200g Greek yoghurt
  • 20g fresh mint
  • 1 lemon
  • 2 tbsp olive oil
  • 1/2 tsp black pepper

    Prepare the pilaf ingredients

    Cut the aubergine into 2cm cubes, finely chop the onion, grate the garlic, rinse the bulgur wheat, roughly chop the spinach and mint, zest the lemon, then cut it into wedges.

    Brown the aubergine

    Heat 1 tablespoon olive oil in a wide lidded pan over a medium-high heat. Add the aubergine with a pinch of salt and half the black pepper, then cook for 7 to 8 minutes, turning often, until golden on several sides; lift onto a plate.

    Brown the lamb

    Add the remaining 1 tablespoon olive oil and the lamb mince to the pan. Cook for 6 to 7 minutes, breaking it into small pieces, until no pink remains and some edges are crisp and brown.

    Stir the onion into the lamb for 4 minutes until softened, then add the garlic, tomato puree, ground cumin, ground coriander, and cinnamon for 1 minute until fragrant and brick red.

    Simmer the bulgur

    Stir in the bulgur wheat, chicken stock, and golden aubergine. Bring to a simmer, cover, and cook over a low heat for 10 to 12 minutes until the stock is absorbed and the bulgur is tender; fold in the spinach for the final 2 minutes.

    Mix the Greek yoghurt with half the mint, the lemon zest, and a squeeze of lemon. Rest the pilaf off the heat for 5 minutes, fluff it with a fork, taste for salt and black pepper, then serve with the minted yoghurt, remaining mint, and lemon wedges.
