  • 300g frozen peas
  • 150g baby spinach
  • 100g rocket
  • 20g fresh mint
  • 1 lemon
  • 1 clove garlic
  • 1 tsp honey
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

    Pick and roughly chop the mint leaves. Finely grate the garlic and lemon zest, then squeeze 2 tablespoons lemon juice.

    Cook the peas

    Tip the frozen peas into a saucepan of boiling water and cook for 3 minutes until bright green and tender. Drain thoroughly and return them to the dry pan.

    Add the garlic, half the mint, half the lemon zest, 1 tablespoon lemon juice, 1 tablespoon olive oil, 0.5 teaspoon salt and half the black pepper. Crush with a potato masher, leaving plenty of whole peas.

    Heat the grill to high. Arrange the sourdough on a baking tray and grill for 2 to 3 minutes on each side until crisp and golden at the edges.

    Spread the crushed peas over the toasts, dot with the goat's cheese and return to the grill for 2 minutes until the cheese is warm and lightly golden.
