  • 600ml oat milk
  • 2 orange
  • 50g pumpkin seeds
  • 2 tbsp chia seeds
  • 4 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 1 tsp vegetable oil

    Heat the oven to 190C/170C fan/gas 5. Grease a 20cm square baking dish with 1 teaspoon vegetable oil. Zest both oranges, juice one, then peel and segment the second for serving.

    Stir the gluten-free porridge oats, chia seeds, cinnamon, baking powder, and half the pumpkin seeds together in a large bowl until evenly combined.

    Whisk the oat milk, maple syrup, orange zest, and orange juice in a jug. Pour it over the oats, stir until no dry pockets remain, then leave for 5 minutes so the mixture starts to thicken.

    Scrape the oat mixture into the greased dish, level the top, and scatter over the remaining pumpkin seeds. Bake for 25 to 28 minutes until the edges are golden, the seeds are toasted, and the centre feels set rather than wet when lightly pressed.
