  • 300g basmati rice
  • 1 tsp salt
  • 1 onion
  • 3 cloves garlic
  • 25g fresh ginger
  • 500g cooked beetroot
  • 20g fresh coriander
  • 2 limes
  • 2 tbsp vegetable oil
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tbsp mild curry powder
  • 250g red lentils
  • 400g chopped tomatoes
  • 700ml vegetable stock
  • 1/2 tsp black pepper

    Cook the rice

    Rinse the basmati rice until the water is nearly clear. Put it in a saucepan with 600ml water and 0.5 teaspoon salt, bring to the boil, cover and cook over very low heat for 12 minutes. Turn off the heat and leave covered for 8 minutes.

    Prepare the aromatics

    Finely chop the onion and garlic, grate the fresh ginger and coarsely grate the cooked beetroot. Separate the fresh coriander stalks from the leaves and finely chop both. Finely grate the lime zest, then cut the limes in half.

    Soften the onion

    Heat the 2 tablespoons vegetable oil in a large deep frying pan over medium heat. Add the onion and chopped fresh coriander stalks, then cook for 4 to 5 minutes until softened without browning.

    Bloom the spices

    Add the garlic, fresh ginger, ground cumin, ground coriander, ground turmeric and mild curry powder. Stir for 1 minute until fragrant, adding a splash of water if the spices begin to catch.

    Simmer the curry

    Rinse the red lentils, then stir them into the pan with the cooked beetroot, chopped tomatoes, vegetable stock, black pepper and remaining 0.5 teaspoon salt. Bring to a lively simmer and cook uncovered for 18 to 20 minutes, stirring often, until the lentils are tender and the curry is thick enough to mound on a spoon.

    Add the fresh finish

    Stir the juice of 1.5 limes and half the fresh coriander leaves through the curry. Taste and add a splash of hot water if it has become thicker than a spoonable dhal.

    Finish the lime rice

    Fluff the basmati rice with a fork, then fold through the lime zest and remaining fresh coriander leaves. Divide the rice and curry between four bowls and serve with the remaining lime half cut into wedges.
