Method

Heat the oven to 200C, or 180C fan, and set out a medium baking dish.

Cook the pasta in boiling water for 8 to 10 minutes until just tender, then drain well.

Finely chop the onion, crush the garlic, and rinse the red lentils in a sieve until the water runs mostly clear.

Fry the turkey mince in a non-stick pan over a medium-high heat for 7 to 9 minutes, breaking it up until browned and piping hot.

Add the onion and garlic for 3 minutes, then stir in the lentils and passata and simmer for 10 minutes until the lentils are tender and the sauce has thickened.

Fold in the pasta and spinach, spoon into the baking dish, and scatter over the cheddar.
