Method

Heat the oven to 200C and set out a medium baking dish.

Cook the pasta in boiling water for 7 minutes, add small broccoli florets for the final 2 minutes, then drain and keep a mug of pasta water nearby.

Cut the salmon into chunky pieces, zest the lemon, roughly chop any large spinach leaves, and grate the cheddar if needed.

Stir the passata, pesto, lemon zest, spinach, pasta, broccoli, and a splash of pasta water together in the baking dish.

Nestle the salmon pieces into the saucy pasta, scatter over the cheddar, and bake for 15 to 18 minutes until bubbling and the salmon flakes easily.

Rest for 5 minutes, then finish with a small squeeze of lemon before serving.
