Method

Heat the oven to 200C, set out a medium baking dish, and bring a saucepan of water to the boil.

Cook the pasta for 8 to 10 minutes until just tender, then drain well and keep back a mug of pasta water.

Drain and rinse the kidney beans, roughly chop any large spinach leaves, and grate the cheddar if needed.

Fry the beef mince in a non-stick frying pan over a medium-high heat for 7 to 9 minutes, breaking it up until browned with no visible pink patches.

Stir in the tomato puree and mild chilli powder for 1 minute, then add the passata, kidney beans, and spinach for 3 to 4 minutes until rich and glossy.

Fold through the pasta, loosen with a splash of pasta water if needed, spoon into the baking dish, scatter over the cheddar, and bake for 15 to 20 minutes until bubbling and golden.
