Method

Heat the oven to 200C, set out a medium baking dish, and bring a saucepan of water to the boil.

Cook the pasta for 8 to 10 minutes until just tender, then drain well and keep back a mug of pasta water.

Cut the chicken into bite-sized pieces and roughly chop any large spinach leaves.

Cook the chicken in a non-stick frying pan over a medium-high heat for 6 to 8 minutes until golden outside and piping hot in the centre, then stir in the curry paste for 1 minute.

Pour in the passata, add the spinach, and simmer for 3 to 4 minutes until the spinach wilts and the sauce coats the chicken. Loosen with a splash of pasta water if needed.

Fold the pasta through the sauce, spoon into the baking dish, scatter over the cheddar, and bake for 15 to 20 minutes until bubbling at the edges and golden on top.
