Method

Dice the onion, crush the garlic, drain and rinse the cannellini beans, and roughly chop any large spinach leaves.

Warm the olive oil in a wide lidded pan over a medium heat, then cook the onion for 5 minutes until soft and glossy.

Stir in the garlic and smoked paprika for 1 minute, then add the rice, chopped tomatoes, and vegetable stock.

Bring to a steady simmer, cover, and cook for 15 minutes, stirring once or twice, until the rice is nearly tender.

Stir in the cannellini beans and spinach, then cook uncovered for 5 minutes until creamy, piping hot, and the spinach has wilted.

Scatter over the cheddar, cover for 2 minutes to melt, then spoon into bowls while hot.
