Method

Rinse the rice, then simmer it in a saucepan of boiling water for 12 to 15 minutes until tender.

Slice the spring onions, keeping the green tops separate, and whisk the miso paste with the soy sauce and 3 tbsp hot water.

Cook the salmon in a non-stick frying pan over a medium heat for 3 to 4 minutes on each side until golden outside and just flaking.

Add the peas and miso-soy glaze to the pan, then cook for 2 to 3 minutes until the peas are hot and the salmon is glossy.

Drain the rice and let it steam dry for 1 minute, then fold through the pale spring onion slices.

Spoon the rice into bowls, top with the salmon, peas, and pan glaze, and finish with the reserved green spring onion tops.
