  • 8 sausages
  • 500g gnocchi
  • 1 red pepper
  • 1 yellow pepper
  • 500g passata
  • 2 tsp smoked paprika
  • 100g spinach
  • 80g cheddar
  • 1 tbsp olive oil

    Heat the oven

    Heat 1 tablespoon olive oil, then heat the oven to 200C. Slice the sausages into bite-sized pieces and cut both peppers into strips.

    Start the pan

    Brown the sausages in a wide ovenproof pan over a medium-high heat for 6 to 8 minutes until coloured on the outside. Hold back extra salt and black pepper until the final taste check.

    Build the flavour base

    Add the sliced peppers and smoked paprika, then cook for 3 to 4 minutes until the peppers start to soften.

    Mix the sauce

    Stir in the gnocchi, passata, and 100ml water, then simmer for 5 minutes so the gnocchi starts to soften in the sauce. Add a small pinch of sugar only if the tomatoes taste sharp.

    Bake until golden

    Fold through the spinach until it just wilts, scatter over the cheddar, and bake for 10 minutes until bubbling and golden at the edges.
