Method

Heat the oven to 200C. Slice the sausages into bite-sized pieces and cut both peppers into strips.

Brown the sausages in a wide ovenproof pan over a medium-high heat for 6 to 8 minutes until coloured on the outside.

Add the sliced peppers and smoked paprika, then cook for 3 to 4 minutes until the peppers start to soften.

Stir in the gnocchi, passata, and 100ml water, then simmer for 5 minutes so the gnocchi starts to soften in the sauce.

Fold through the spinach until it just wilts, scatter over the cheddar, and bake for 10 minutes until bubbling and golden at the edges.
Rest for 2 minutes before serving so the sauce thickens and coats the gnocchi.
