  • 600ml oat milk
  • 2 apples
  • 200g blueberries
  • 1 banana
  • 2 tbsp maple syrup
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract

    Prepare the fruit

    Heat the oven to 190C/170C fan/gas 5. Core and coarsely grate one apple, then thinly slice the second apple for the top. Mash the banana in a large mixing bowl until mostly smooth.

    Mix the oat base

    Stir the oats, grated apple, baking powder, cinnamon, vanilla, oat milk, and maple syrup into the mashed banana. Leave for 5 minutes so the oats begin to soften.

    Lightly oil a medium baking dish. Fold most of the blueberries through the oat mixture, spoon it into the dish, then scatter over the remaining blueberries and arrange the apple slices on top.
