  • 2 tins chickpeas
  • 8 wholemeal tortilla wraps
  • 250g cucumber
  • 2 little gem lettuce
  • 1 red onion
  • 3 tbsp green pesto
  • 1 tsp black pepper
  • 1 tbsp olive oil

    Prepare the vegetables

    Cut the cucumber into thin batons, shred the lettuce, finely slice the red onion, and lay the wraps on a clean board.

    Drain and rinse the chickpeas, pat them dry, then heat 2 teaspoons of the olive oil in a frying pan and cook for 6 to 8 minutes, turning until golden at the edges and hot through.

    Stir the green pesto with the remaining 1 teaspoon olive oil, black pepper, 1 tbsp water, and a pinch of salt until spoonable.
