Method

Cut the cucumber into thin batons, shred the lettuce, finely slice the red onion, and lay the wraps on a clean board.

Drain and rinse the chickpeas, pat them dry, then heat the olive oil in a frying pan and cook for 6 to 8 minutes, turning until golden at the edges and hot through.

Stir the green pesto with black pepper, 1 tbsp water, and a pinch of salt until spoonable.

Spread the pesto dressing over the wraps, then divide over the chickpeas, cucumber, lettuce, and red onion.

Fold in the sides, roll each wrap firmly for 2 minutes, then cut in half and pack seam-side down.
