Method

Drain the sweetcorn if needed, shred the lettuce, finely slice the red onion, and lay the wraps on a clean board.

Drain and rinse the chickpeas, pat them dry, then heat the olive oil in a frying pan and cook for 6 to 8 minutes, turning until golden at the edges and hot through.

Squeeze the lemon juice into a small bowl, stir in the dried oregano, olive oil, 1 tbsp water, and a pinch of salt until spoonable.

Spoon the lemon oregano dressing over the wraps, then divide over the chickpeas, sweetcorn, lettuce, and red onion.

Fold in the sides, roll each wrap firmly for 2 minutes, then cut in half and pack seam-side down.
