  • 2 tins chickpeas
  • 8 wholemeal tortilla wraps
  • 250g sweetcorn
  • 2 little gem lettuce
  • 1 red onion
  • 1 lemon
  • 1 tsp dried oregano
  • 1 tbsp olive oil

    Prepare the vegetables

    Drain the sweetcorn if needed, shred the lettuce, finely slice the red onion, and lay the wraps on a clean board.

    Cook the protein

    Drain and rinse the chickpeas, pat them dry, then heat 2 teaspoons of the olive oil in a frying pan and cook for 6 to 8 minutes, turning until golden at the edges and hot through. Season the chickpeas with a pinch of salt and black pepper while they cook.

    Squeeze the lemon juice into a small bowl, stir in the dried oregano, the remaining 1 teaspoon olive oil, 1 tbsp water, and a pinch of salt until spoonable.

    Spoon the lemon oregano dressing over the wraps, then divide over the chickpeas, sweetcorn, lettuce, and red onion.
