  • 450g red pepper
  • 800g new potatoes
  • 2 red onion
  • 2 tsp fresh ginger
  • 1 lime
  • 1 bunch spring onions
  • 2 tbsp olive oil

    Heat the oven to 220C/200C fan/gas 7. Halve the potatoes, cut the red pepper into bite-sized pieces, slice the red onion, and keep the turkey mince chilled until needed.

    Toss the potatoes, onion, red pepper, fresh ginger, olive oil, and salt on a large roasting tray.

    Roast for 18 minutes, turning once, until the potatoes are starting to colour and the vegetables are softening.

    Break the turkey mince into small rough nuggets over the tray, turning them through the ginger oil. Roast for 14 to 16 minutes, stirring once, until no pink remains and the potatoes are golden.
