Method

Mash the bananas in a bowl until mostly smooth, then whisk in the eggs and milk.

Stir through the oats and cinnamon to make a thick batter, then leave it to sit for 5 minutes so the oats soften. Add a small pinch of salt to bring out the sweetness.

Warm a non-stick frying pan over a medium heat and brush with 1 teaspoon vegetable oil.

Spoon in small rounds of batter and cook for 2 to 3 minutes until bubbles appear and the edges look set.

Flip carefully and cook for 1 to 2 minutes more until golden and cooked through, then repeat with the remaining batter.
Stack the pancakes and serve warm with yoghurt or fruit if you have it.
