Spiced beef kofta flatbreads with garlicky cucumber tzatziki, juicy tomatoes, and fresh mint.

Method

Grate half the cucumber, squeeze out the excess water with clean hands, halve the tomatoes, finely chop the mint, crush the garlic, and halve the lemon. Save the remaining cucumber for another meal.

Mix the Greek yogurt with the grated cucumber, half the garlic, half the mint, a squeeze of lemon juice, and a pinch of salt. Set aside so the flavour settles.

Put the beef mince in a bowl with smoked paprika, the remaining garlic, salt, and black pepper. Mix well, then shape into 8 short kofta logs.

Heat the olive oil in a large frying pan over a medium-high heat. Fry the kofta for 10 to 12 minutes, turning every few minutes, until browned all over and no longer pink in the middle.

While the kofta cook, toss the tomatoes with the remaining mint, another squeeze of lemon, and a pinch of salt. Warm the flatbreads for 30 seconds on each side in a dry pan, or microwave for 20 seconds.

Spread each warm flatbread with tzatziki, add 2 kofta, spoon over the tomato salad, and finish with any remaining mint. Fold and serve while hot.
