Method

Slice the banana and lightly crush half the blackcurrants with a fork, keeping the rest for topping.

Whisk the chia seeds with the coconut milk and maple syrup for 1 minute, making sure there are no dry clumps.

Stir through the crushed blackcurrants and half the banana.

Leave for 10 minutes, whisk again, then cover and chill for at least 2 hours until thick.
Spoon into bowls or pots and finish with the reserved blackcurrants and banana just before serving.
