Method

Rinse the rice, then cook it in a saucepan of simmering water for 12 to 15 minutes until tender.

Slice the cucumber and tomatoes, cut the lemon into wedges, and toss the chicken thighs with the shawarma spice and a pinch of salt.

Cook the chicken in a non-stick frying pan over a medium-high heat for 6 to 8 minutes on each side until golden, piping hot, and no pink meat remains.

Rest the chicken for 5 minutes, then slice it into strips.

Stir a squeeze of lemon through the yogurt to make a quick drizzle.

Spoon the rice into bowls, add shawarma chicken, cucumber, tomatoes, and lemon yogurt, then serve with extra lemon wedges.
