Method

Peel and dice the mango, slice the banana, zest the lime, and keep a spoonful of fruit aside for topping.

Whisk the chia seeds with the coconut milk, lime zest, and a small squeeze of lime juice for 1 minute until there are no dry clumps.

Stir through half the mango and banana, then leave for 10 minutes and whisk again.

Cover and chill for at least 2 hours until thick and spoonable.
Spoon into bowls or pots and finish with the reserved fruit just before serving.
