  • 900g potatoes
  • 150g peas
  • 2 carrots
  • 1 onion
  • 2 tbsp tomato puree
  • 300ml beef stock
  • 25g butter
  • 75ml milk

    Heat the oven

    Heat the oven to 200C, then peel and chop the potatoes into even chunks.

    Boil the potatoes in a saucepan for 15 to 18 minutes until tender enough to crush easily with a fork. Hold back extra salt and black pepper until the final taste check.

    While the potatoes cook, dice the onion and carrots into small pieces so they soften evenly in the filling.

    Fry the beef mince in a wide pan over a medium-high heat for 6 to 8 minutes, breaking it up until browned.

    Add the onion and carrots for 5 minutes until starting to soften, then stir in the tomato puree for 1 minute.

    Cook the beef mince

    Pour in the beef stock, simmer for 6 to 8 minutes until glossy and saucy, then stir in the peas for the final 2 minutes.

    Drain the potatoes, mash with the butter and milk until fluffy, then spoon the beef filling into a baking dish and spread the mash over the top.

    Rough up the mash with a fork and bake for 20 to 25 minutes until the top is golden and the filling bubbles at the edges. Taste once everything is assembled, then add a little salt and black pepper only if needed.
