Method

Heat the oven to 190C, then grate the courgette and squeeze out any excess liquid.

Slice the spring onions, grate the cheddar if needed, cut the potatoes into 1cm chunks, then simmer them for 6 to 8 minutes until just tender and drain well.

Whisk the eggs in a bowl for 30 seconds, then stir through the courgette, spring onions, potatoes, and most of the cheddar.

Warm an ovenproof frying pan over a medium heat, pour in the egg mixture, and cook for 4 minutes until the edges begin to set.

Scatter over the remaining cheddar, transfer to the oven, and bake for 10 to 12 minutes until the centre is set and the top is lightly golden.
Rest for 5 minutes, then slice into wedges and serve warm or at room temperature.
