  • 3 peppers
  • 1 red onion
  • 6 wraps
  • 1 lime

    Heat the oven

    Heat the oven to 220C and put a large roasting tray in to warm. A hot tray helps the peppers char instead of steam.

    Slice the peppers and red onion into thin strips. Cut the halloumi into chunky fingers so it browns without melting away.

    Roast the veg

    Toss the peppers and onion on the hot tray with 1 tbsp oil, a pinch of salt, and half the lime juice. Roast for 12 minutes until starting to char at the edges.

    Add the halloumi

    Turn the vegetables, lay the halloumi on top, and roast for 8 to 10 minutes more until the halloumi is golden and the veg is soft.

    Warm the wraps for 30 seconds in a dry pan or microwave until soft. Squeeze the remaining lime over the tray.
