Method

Slice the mushrooms, roughly chop the spinach, grate the cheddar if needed, and whisk the eggs in a bowl for 30 seconds.

Warm the butter in a non-stick frying pan over a medium heat until foaming.

Cook the mushrooms for 4 to 5 minutes until softened and any liquid has cooked away.

Add the spinach for 1 minute until wilted, then pour in the eggs and tilt the pan to spread them evenly.

Cook for 3 to 4 minutes until just set, scatter over the cheddar, fold the omelette in half, and slide onto a plate.
