Method

Cut the mushrooms into bite-sized pieces and roughly chop the spinach. Whisk the eggs with a pinch of salt and black pepper for 30 seconds.

Heat butter in a non-stick frying pan over a medium heat.

Cook mushrooms and spinach for 4-5 minutes until softened and any liquid has cooked away.

Pour in the eggs and tilt the pan so they spread evenly. Cook for 3-4 minutes until the edges set and the middle is almost firm.

Scatter over the cheddar, fold or slice the eggs, and rest for 2 minutes before serving.
