  • 2 broccoli
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp ginger
  • 1 tbsp olive oil

    Cook the rice

    Rinse the rice until the water runs mostly clear, then simmer in a saucepan of boiling water for 12 to 15 minutes until tender. Drain, cover, and leave to steam dry. Hold back extra salt and black pepper until the final taste check.

    Prep the greens

    Cut the broccoli into small florets and finely grate the ginger. Mix the soy sauce, honey, and ginger in a small bowl to make the teriyaki glaze.

    Steam-fry the broccoli

    Heat a splash of oil in a non-stick frying pan over a medium-high heat. Add the broccoli with 2 tbsp water and cook for 4 to 5 minutes until bright green and just tender.

    Cook the salmon

    Push the broccoli to one side, add the salmon skin-side down, and cook for 3 to 4 minutes. Turn and cook for 2 to 3 minutes more until the fish flakes easily.

    Pour in the teriyaki glaze and bubble for 1 to 2 minutes, spooning it over the salmon until glossy. Add a splash of water if the glaze gets too sticky.
