Method

Rinse the rice until the water runs mostly clear, then simmer in a saucepan of boiling water for 12 to 15 minutes until tender. Drain, cover, and leave to steam dry.

Cut the broccoli into small florets and finely grate the ginger. Mix the soy sauce, honey, and ginger in a small bowl to make the teriyaki glaze.

Heat a splash of oil in a non-stick frying pan over a medium-high heat. Add the broccoli with 2 tbsp water and cook for 4 to 5 minutes until bright green and just tender.

Push the broccoli to one side, add the salmon skin-side down, and cook for 3 to 4 minutes. Turn and cook for 2 to 3 minutes more until the fish flakes easily.

Pour in the teriyaki glaze and bubble for 1 to 2 minutes, spooning it over the salmon until glossy. Add a splash of water if the glaze gets too sticky.

Fluff the rice into bowls, top with broccoli and salmon, then spoon over any pan glaze. Break the salmon into large flakes if serving younger children.
