Method

Heat the oven to 190C. Slice the courgettes into thin half-moons and roughly chop the spinach if the leaves are large.

Warm the chopped tomatoes in a saucepan over a medium heat for 5 minutes with a pinch of salt and black pepper. Stir in the spinach until just wilted.

Spoon a thin layer of tomato sauce into a baking dish, then add lasagne sheets. Spread over some courgette and dot with ricotta.

Repeat the layers, pressing the sheets down gently so they sit in the sauce. Finish with tomato sauce on top and scatter over the parmesan.

Bake for 30 to 35 minutes until the pasta is tender when pierced with a knife and the top is golden and bubbling.

Leave the lasagne to rest for 5 minutes before slicing. This keeps the layers neat and stops the filling spilling out.
