  • 2 courgette
  • 150g spinach
  • 2 tins chopped tomatoes
  • 250g ricotta
  • 50g parmesan
  • 1 tbsp olive oil

    Heat 1 tablespoon olive oil, then heat the oven to 190C. Slice the courgettes into thin half-moons and roughly chop the spinach if the leaves are large.

    Warm the chopped tomatoes in a saucepan over a medium heat for 5 minutes with a pinch of salt and black pepper. Stir in the spinach until just wilted. Add a small pinch of sugar only if the tomatoes taste sharp.

    Spoon a thin layer of tomato sauce into a baking dish, then add lasagne sheets. Spread over some courgette and dot with ricotta.
