Method

Dice the peppers, then drain and rinse the kidney beans, black beans, and corn.

Heat 1 tablespoon olive oil, then cook the rice in a saucepan of simmering water for 12 to 15 minutes until tender, then drain and keep warm. Hold back extra salt and black pepper until the final taste check.

Warm a wide pan over a medium heat and cook the peppers with the mild chilli powder and cumin for 4 to 5 minutes until the peppers start to soften.

Stir in the kidney beans, black beans, corn, and chopped tomatoes, then bring to a steady simmer.

Simmer for 12 to 15 minutes until the sauce thickens and everything is piping hot.

Spoon the rice into warm bowls, top with the chilli, and add yogurt or cheese at the table if you like. Taste once everything is assembled, then add a little salt and black pepper only if needed.
